4 heads radicchio, cored and quartered
4 romaine hearts
1/3 cup olive oil, plain or flavoured (suggested flavour: Tuscan Herb)
1/4 cup balsamic vinegar, plain or flavoured (suggested flavour: Grapefruit)
6 chopped garlic cloves
1/2 teaspoon dried crushed red pepper
1/4 cup shaved hard cheese (suggested type: pecorino)
salt and pepper to taste
Whisk dressing ingredients together in a large bowl. Add salad ingredients, toss, and allow to marinate for 20 minutes. Bring barbecue to medium heat.
Place radicchio and romaine on grill and sprinkle with salt and pepper; set marinade aside. Grill until edges are crisp and charred, about 6 minutes. Move to serving dishes, drizzle with marinade, and sprinkle with cheese.
