1 cup vegetables, typically a base of leafy greens plus other vegetables
3 tablespoons olive oil, plain or flavoured
1 tablespoons balsamic vinegar, plain or flavoured
salt and pepper to taste
optional: hard cheese, shaved or shredded
Whisk olive oil, balsamic vinegar, and salt/pepper together to make the dressing. Pour dressing over vegetables and toss until thoroughly coated. Top with cheese.
