Olive Oil Granola

Dry Ingredients

6 cups oats
1 cup nuts
1 cup unsweetened flaked coconut
1 cup dried fruit

Wet Ingredients

1/2 cup olive oil, plain or flavoured
1/2 cup honey
1 teaspoon vanilla


Preheat oven to 325˚F, with rack in middle position.

Mix dry ingredients and spread in an even layer on a lined baking sheet. Warm the honey (in a pot over low heat or in the microwave) so it becomes more fluid, then whisk olive oil and vanilla into the warm honey. Drizzle the wet mixture over the dry layer on the baking sheet. Gently toss the granola to ensure an even coating, then redistribute in an even layer.

Bake for 30 minutes, until granola is fragrant and golden brown. At ten minute intervals, stir the granola to spread the liquid coating. Stir one last time when the granola is done baking.

Allow granola to cool and store in an airtight container up to 3 weeks.
