1 large onion, thinly sliced
1 large roasted red pepper, finely chopped
5 tablespoons olive oil, plain or flavoured
1 teaspoon salt
black pepper to taste
Heat 2 tablespoons olive oil in a heavy-bottomed pan over medium heat. Add onion and salt. Stir for 20 minutes, allowing onions to carmelize but not char. During the last five minutes, add the chopped red pepper and black pepper.
Pour contents of pan into a food processor, along with 3 tablespoons of olive oil. Process to desired consistency. Spoon into a jar and let cool.
Serve with just about any meal. Can be stored in a refrigerated jar for up to one week.
