Balsamic Shrub

A “shrub” is a drink (alcoholic or non) flavoured with vinegar. Our white balsamics are perfect for shrubs.

The following recipe takes infused white balsamic and re-infuses it with fresh fruit, making for a doubly delicious drink flavouring!


1 cup white balsamic
½ cup fresh fruit
chilled sparkling water


Combine fruit and balsamic vinegar in a container, cover and let sit 1-4 hours in fridge. Some recommended combinations:

  • 1 cup lemon white balsamic + ½ cup crushed blueberries
  • 1 cup peach white balsamic + ½ cup chopped strawberries
  • 1 cup mango white balsamic + ½ cup sliced kiwi fruit

For more flavour complexity, try adding herbs as well, such as a sprig of thyme or mint.

Strain, and your vinegar is ready to use: add ½-1 tablespoon to a glass of chilled sparkling water. Store vinegar in fridge for up to a month.
