Cheddar Potato Waffles

Serves 6-8

2 cups mashed potatoes
1 cup flour (or 1/2 cup potato starch)
1 cup cheddar cheese, grated
2 large scallions, thinly sliced
1/3 cup olive oil, plain or flavoured (recommended flavours: Garlic, Butter, Tuscan Herb)
1 large egg, beaten
1 teaspoon baking powder
2 teaspoons salt
fresh ground pepper to taste
sour cream, hot sauce (optional for serving)


Heat waffle maker. Except for half the sliced scallions (reserve for garnish), thoroughly whisk all ingredients in a large bowl.

Grease the hot waffle iron. Use 1/3 cup batter for each waffle, cooking until golden brown on the inside, about 5 minutes per waffle.

Serve with a dollop of sour cream, drizzle with hot sauce, and sprinkle with scallions.
