Olive Oil Brownies

Yields one square pan (8" or 9")

3 eggs
1/2 cup olive oil
1 tablespoon vanilla


1½ cups sugar
1½ cups flour
½ cup cocoa powder
1 tsp salt
optional: ½ cup cocoa nibs


Preheat oven to 350˚F with rack in middle position. Line a square pan (8” or 9”) with parchment paper.

Add eggs to large bowl and mix well. Add sugar gradually while mixing at medium-high speed, to a thick, creamy consistency. Add oil gradually while mixing at low speed, then add vanilla.

Sift flour, cocoa powder, and salt into a bowl. Add egg mixture and stir until just mixed. Pour into pan and (optionally) sprinkle with nibs.

Bake about 30 minutes, or until toothpick comes out with a few moist crumbs. Let cool in pan before serving.
